Sesame Salmon Bowls

I love rice bowls and everything cilantro lime! The 2 are coming together in this salmon cabbage dish.

 


  • Basmati rice
  • Diced red bell pepper
  • Massel stock cube (or low FODMAP broth)
  • Olive oil
  • Dried cilantro
  • Fresh lime juice
  • Fresh cilantro leaves
  • Salmon filets
  • Beaten eggs for dipping
  • Sesame seeds
  • Cabbage (shredded)
  • Seasoned rice vinegar
  • Avocado slices
  • Chopped fresh tomatoes
  • Sliced cucumbers
  • Chopped green onions (green part only)
  • Mayo
  • Ketchup (low FODMAP brand such as FODY)
  • Chili pepper paste (low FODMAP)

 

 

Cilantro lime rice – cook rice according to package instructions with low FODMAP broth or Massel stock cube, olive oil, red bell pepper and dried cilantro.  Before serving, squeeze in fresh lime juice and add chopped fresh cilantro

Salad – toss cabbage in seasoned rice vinegar, marinate tomatoes and cucumbers in olive oil and sea salt, combine in bowl while salmon cooks

Salmon filets – dip filets into beaten egg then sesame seeds, drizzle with olive oil and cook on parchment lined sheet pan in oven at 450 for about 10 minutes or until cooked to desired doneness

Dressing – mix equal parts mayo and ketchup, add chili paste to taste

Layer rice, salad ingredients, salmon filets in serving bowl and top with avocado, fresh cilantro, green onions and spicy mayo
