Garden Veggie Pasta Salad
I love all forms of
pasta and this summer version is full of fresh flavors.
- GF quinoa noodles (I use Andean Dream brand)
- Cherry tomatoes
- Cucumbers
- Red bell pepper
- Garlic infused olive oil
- Dried basil & oregano
- Fresh chives & green onions
- Fresh burrata (or skip to keep vegan)
- Salt
Optional: Garden
Herb dressing by FODY Foods
Boil noodles
according to package instructions in heavily salted water, strain and add to
bowl
Cut and marinate
tomatoes/cucumbers/bell peppers in garlic infused olive oil, salt, dried basil
and oregano; add to bowl with noodles
Serve with burrata
and additional olive oil or the Garden Herb dressing if desired
