Garden Veggie Pasta Salad

 

I love all forms of pasta and this summer version is full of fresh flavors.

 


  • GF quinoa noodles (I use Andean Dream brand)
  • Cherry tomatoes
  • Cucumbers
  • Red bell pepper
  • Garlic infused olive oil
  • Dried basil & oregano
  • Fresh chives & green onions
  • Fresh burrata (or skip to keep vegan)
  • Salt

Optional: Garden Herb dressing by FODY Foods

 

Boil noodles according to package instructions in heavily salted water, strain and add to bowl

Cut and marinate tomatoes/cucumbers/bell peppers in garlic infused olive oil, salt, dried basil and oregano; add to bowl with noodles

Serve with burrata and additional olive oil or the Garden Herb dressing if desired
