Spaghetti & Clams– GF & Low FODMAP
Spaghetti and clams - a favorite meal of mine!!!
- Spaghetti style quinoa noodles
- Clams (I used littlenecks)
- Garlic infused olive oil
- Parmesan cheese
- Lemon
- Sea salt
- Fresh herbs – chives & parsley
Add noodles to heavily
salted boiling water and cook according to package instructions (about 15
minutes)
Add clams to separate
pot of boiling water and cook until open (about a few minutes)
Shred cheese while
noodles are cooking
Drain noodles,
drizzle in olive oil, add shredded cheese, mix to combine, add clams and
squeeze fresh lemon juice over the dish, salt to taste and top with herbs
