Grilled Bison Sandwich-Low FODMAP
The grilled veggies and the mustard vinaigrette are where the flavor is at – you can skip the bison and have a grilled veggie sandwich, see 2nd picture below for the meatless option.
- Grilled bison filet
- Grilled veggies of choice
- Fresh burrata
- GF ciabatta roll (I used Schar brand)
- Mustard vinaigrette with fresh herbs
Olive oil (roughly 3 parts)
Deli or Dijon mustard (watch for garlic
and use roughly 1 part)
Apple Cider Vinegar (roughly 1 to 2
parts)
Honey & salt (optional to taste,
also thin with water if needed)
Thyme and chives
Clean/slice
vegetables – I used red bell peppers, zucchini & yellow squash
Whisk olive oil,
vinegar, mustard and honey, add fresh herbs; toss vegetables in olive oil
mixture, reserve some for extra dressing
Grill filet and
veggies to desired doneness
Brush ciabatta roll with
mustard vinaigrette; add meat and veggies, top with fresh burrata
