Meatless Monday “Lobster Rolls” – Vegan, GF & Low FODMAP
I would give this recipe
a B- I missed the mayo and the hearts of
palm are a little “briny” to be a lobster replacement
Rinse well, drain,
and chop hearts of palm
Combine in a bowl with:
- 1 tablespoon of dried dill
- 1 tablespoon of dried chives
- 2 chopped celery stalks (this should be a safe serving size but if mannitol bothers you, ease up on the amount of celery)
- 1 small chopped & salted cucumber
- ½ red bell pepper, chopped
- 1/4 cup of green onion (green tops only)
Mix in mustard vinaigrette
(olive oil whisked with deli mustard or Dijon watch for honey to keep vegan and
add a drizzle of maple syrup if too sour)
Serve on vegan/gluten
free rolls (I use Schar brand ciabatta rolls) lined with arugula and top with
fresh chives and dill (makes 8)
