Breakfast Bagel Salad with Avocado Ranch

This is the perfect salad for any time of the day!

 


  • Cubed GF bagels (I use Udi’s brand, tossed in garlic infused olive oil and sea salt, toasted in the oven for about 7 minutes at 400 degrees)
  • Arugula
  • Hard-boiled eggs quartered
  • Shredded cheese (I use an asiago, parmesan, fontina, provolone blend)

 

Avocado Ranch Dressing:

  • 12 oz lactose free sour cream (I use Green Valley Creamery)
  • 6 oz mayonnaise
  • 1 avocado mashed with lemon juice to preserve quality
  • Splash of olive oil to thin to desired consistency
  • 2 tablespoons (or to taste) Low FODMAP ranch seasoning (I used Smoke N Sanity Supper Club Ranch)


Blend until smooth
