Leftovers Pasta Dish – GF & Low FODMAP
I hate to waste and I
have several things on hand that need to be used up so I’m combining them into
a pasta dish tonight.
Quinoa noodles (I
use Andean Dream brand) boiled in heavily salted water
Orange bell pepper
Tomatoes marinated
in garlic infused olive oil and salt
Arugula
Fresh corn
Fresh basil and chives
Shredded cheese
blend
Leftover prawns
Clean and cut
vegetables while bringing water to a boil
Add noodles and cook
according to package instructions (about 15 minutes)
Toss noodles in
olive oil and combine with remaining ingredients
