Lobster Mac N Cheese – GF & Low FODMAP
I love macaroni and cheese, I love lobster and I pout every time I see it on a menu knowing I can’t have it so I’m cooking up a GF and low FODMAP version
- Lobster tails
- Quinoa noodles (I use Andean Dream brand)
- Garlic infused olive oil
- Lemon
- Shredded Italian cheese blend or parmesan and cheddar (more than one kind works best)
- Fresh chives
Boil lobster tails
for about 7 minutes or until shell is bright read and meat is white (crack, remove
meat and chop)
Prepare quinoa
noodles according to package instructions (boil in salted water about 15
minutes)
Drizzle garlic infused
olive oil into noodles, mix in cheese over low heat until melted, squeeze in
fresh lemon juice, add lobster and top with fresh chives
