Totchos for 2!


I love nachos and with a couple low FODMAP products we’re making these quick and easy breakfast nachos with tater tots!  

Hope there's enough for the 2 of us 😋

 


  • GF tater tots (I used Cascadian Farm Organic brand)
  • Shredded cheese of choice (I used organic white cheddar)
  • Eggs (I scrambled but over easy would work also)
  • Bacon – cooked and chopped
  • Chopped green onion (green tops only to keep low FODMAP)
  • Fresh cilantro for topping
  • Salsa (I used FODY brand mild flavor)
  • Sour cream (I used Green Valley Organic - lactose free)

 


Fry and chop bacon

Scramble eggs

Bake tots according to package instructions and then top with eggs, bacon and shredded cheese – bake for another few minutes until cheese is melted

Top with fresh cilantro and green onion

Serve with salsa and sour cream
