Avocado Bagel Salad
- Cubed GF bagels (I used Udi’s brand, tossed in garlic infused olive oil and sea salt, toasted in the oven for about 7 minutes at 400
- Arugula
- Pre-cooked, chopped bacon
- Hard-boiled eggs
- Shredded cheese
- Avocado wedges (I used frozen since I always have that on hand but fresh would be better – toss in lemon juice to preserve quality)
Honey mustard dressing:
3 parts mayonnaise
1 part stone ground mustard (watch ingredients to ensure
low FODMAP)
Splash of apple cider vinegar
Honey and sea salt to taste
