Avocado Bagel Salad

This is a cross between a bagel salad and an avocado toast salad and I love it for brunch!  It really works as a breakfast or lunch food.

 


  • Cubed GF bagels (I used Udi’s brand, tossed in garlic infused olive oil and sea salt, toasted in the oven for about 7 minutes at 400
  • Arugula
  • Pre-cooked, chopped bacon
  • Hard-boiled eggs
  • Shredded cheese
  • Avocado wedges (I used frozen since I always have that on hand but fresh would be better – toss in lemon juice to preserve quality)

 

Honey mustard dressing:

3 parts mayonnaise

1 part stone ground mustard (watch ingredients to ensure low FODMAP)

Splash of apple cider vinegar

Honey and sea salt to taste
