Oven Baked Ranch Chicken Tenders
It’s game day here and we’re celebrating Super Bowl Sunday with gluten free/low FODMAP chicken tenders. Thanks to my Smoke N Sanity find, we’re having ranch flavored tenders and dip!
Chicken strips
GF flour (I used Hearthy
Foods cassava to keep it grain free)
Pecan flour (I used
Hearthy brand)
Smoke N Sanity
Supper Club Ranch seasoning (this is low FODMAP but does contain corn starch)
Eggs
Salt
Olive oil spray
For Dip – lactose
free sour cream (I use Green Valley Organics) and Smoke N Sanity Supper Club
Ranch seasoning
Season chicken with pinch
of salt, dredge in the GF flour, dip in beaten eggs, coat with pecan
flour/ranch mixture (mix to taste, I did about 1 cup flour to 1 tablespoon of seasoning)
and spray with olive oil
Bake at 425 for
about 20 minutes or until fully cooked (flipping once) on an oiled rack
I served with ranch
dip – 1 container of organic lactose free sour cream and 1 tablespoon of ranch
seasoning – you also can thin with mayo, water or apple cider vinegar
