Greek Summer Dip
I love this protein hearty dip for using up all those summer tomatoes and cucumbers!
- 1 can of organic chickpeas
- Olive oil
- Chopped tomatoes marinated in olive oil, salt, dried basil and oregano
- Chopped cumbers salted
- Chopped kalamata olives
- Feta cheese
- Parsley or herbs of choice
- Cucumber slices for serving
- GF crackers for serving
Puree beans, sea salt
and olive in food processor until smooth, add water if needed
Fill platter with
bean dip and top with veggies, cheese, and herbs
Serve with crackers
and cucumber slices
