Fig Jam Chicken with Orzo

This was a bit of “pull together what we have around the house” for a one pot meal.

 


  • Chicken thighs (about 4 to 6)
  • Massel Foods low FODMAP broth cubes (or seasoning of choice)
  • Olive oil
  • Broth (about 2 cups - I used water and the Massel cubes)
  • Cheese (brie works well here)
  • Fig jam
  • GF orzo (1 package or about 8 ounces)
  • Spinach

 

Sear chicken in oven safe dish with olive oil and crumbled broth cube on both sides, remove once golden

Toast GF orzo in olive oil about 2 minutes, add broth and bring to boil for a few minutes (stirring continually), add additional broth if needed

Stuff cheese under skin of chicken, apply jam to chicken skin and return to dish

Bake at 350 for about 20 minutes or until chicken is cooked through and orzo is done

Add spinach before serving
