Lemon Chickpea Soup
The “I’m ready for summer soup” – full of nutrients and summer flavors, gluten free and vegan
- ·
Chopped organic
carrots and celery (about 4 each)
- ·
Organic
olive oil
- ·
Sea salt
- ·
6 cups
of veggie broth
- · 1 can
organic chickpeas, well rinsed
- ·
1 box GF
organic orzo (I use Andean Dream brand)
- ·
1 large
handful of fresh organic spinach
- ·
Juice and
zest of 1 organic lemon
- · Fresh and/or
dried dill
Sautee carrots and celery
in olive oil for about 5 minutes
Add broth, bring to
a boil, add beans and orzo
Simmer uncovered until
orzo is cooked
Add dill, lemon and
spinach
Add salt to taste
