Lemon Chickpea Soup

The “I’m ready for summer soup” – full of nutrients and summer flavors, gluten free and vegan

 


  • ·        Chopped organic carrots and celery (about 4 each)
  • ·        Organic olive oil
  • ·        Sea salt
  • ·        6 cups of veggie broth
  • ·        1 can organic chickpeas, well rinsed
  • ·        1 box GF organic orzo (I use Andean Dream brand)
  • ·        1 large handful of fresh organic spinach
  • ·        Juice and zest of 1 organic lemon
  • ·        Fresh and/or dried dill

 

Sautee carrots and celery in olive oil for about 5 minutes

Add broth, bring to a boil, add beans and orzo

Simmer uncovered until orzo is cooked

Add dill, lemon and spinach

Add salt to taste
