Quinoa Breakfast Bowl

I love a quick healthy make ahead breakfast for busy mornings.  This one uses quinoa and sweet potatoes that were made ahead and fresh avocado with an over easy egg - pulls together in 10 minutes.

 


Quinoa – I make a batch on the weekend for the week ahead in the pressure cooker (1 cup quinoa, 1 ½ cups of water, 1 stock cube for flavor – cook on high pressure for 1 minute and release)

Lemon roasted sweet potatoes – I make a sheet pan of these to have on hand for the week (roast chopped sweet potatoes in lemon infused olive oil and sea salt at 400 for about 20 minutes or use fresh lemon juice and olive oil)
