Meatless Monday - Creamy Pesto Pasta– GF & Low FODMAP

I love my basil hydroponic jar but I had so much to use up that I thought a batch of pesto was in order.  Add some noodles and you have a perfect meatless Monday dish!



  • Spaghetti style quinoa noodles
  • Massel vegetable stock cube (or any low FODMAP brand)
  • Fresh basil
  • Pine nuts
  • Olive oil
  • Sea salt

 

Mix stock cube with 1 cup of water, set aside

Add noodles to heavily salted boiling water and cook until al dente

Make pesto while noodles are cooking

Add basil and pine nuts to food processor and drizzle in olive oil, to desired texture, while pulsing; salt to taste

Drain noodles, add the vegetable broth and continue to heat on low as the noodles absorb the broth and fully cook, add in pesto

 

Note: you can also use parmesan cheese in the pesto or as a pasta topping if not dairy free
