Cabbage Noodle Soup – GF & Low FODMAP

I really miss ramen noodle soup and this has a similar vibe with low FODMAP ingredients!

 


  • Spaghetti style quinoa noodles
  • Massel vegetable stock cube (or any low FODMAP brand)
  • Shredded cabbage
  • Mushrooms (canned and well rinsed to keep low FODMAP)
  • Olive oil
  • Soft boiled eggs
  • Green onions

 

Mix stock cube with 2 cups of water

Sauté cabbage and mushrooms in olive oil until cabbage is soft, add broth and simmer while noodles cook (add additional water if needed)

Add noodles to salted boiling water and cook until al dente

Drain noodles, add to the soup and continue to heat on low as the noodles absorb the broth and fully cook

Serve with soft boiled egg and sliced green onions
