Lemon Herb Quinoa Salad

I’m hanging onto summer with this sweet and salty, crunchy salad!

 


  • Cooked quinoa (I made mine with a Massel plant-based stock cube)
  • Cherry tomatoes (cut and salted)
  • Sweet corn (cooked and cut from cob)
  • Diced peaches
  • Sliced avocado
  • Fresh cilantro
  • Roasted pumpkin seeds
  • Honey roasted chickpeas (I buy the Biena Snacks brand or you could make them)


  • Mayo
  • Fresh lemon juice
  • Maple syrup
  • Chives
  • Dill

 


Make dressing by combing the mayo, lemon juice, chives, dill and maple syrup to taste.

Combine remaining ingredients in bowl and toss with dressing.
