Lemon Herb Quinoa Salad
I’m hanging onto summer with this sweet and salty, crunchy salad!
- Cooked quinoa (I made mine with a Massel plant-based stock cube)
- Cherry tomatoes (cut and salted)
- Sweet corn (cooked and cut from cob)
- Diced peaches
- Sliced avocado
- Fresh cilantro
- Roasted pumpkin seeds
- Honey roasted chickpeas (I buy the Biena Snacks brand or you could make them)
- Mayo
- Fresh lemon juice
- Maple syrup
- Chives
- Dill
Make dressing by combing
the mayo, lemon juice, chives, dill and maple syrup to taste.
Combine remaining ingredients
in bowl and toss with dressing.
