Strawberry Goat Cheese Tarts – Gluten Free

It’s Mother’s Day and I’m making a sweet treat for brunch!

 


  • GF puff pastry sheets (I use geefree brand)
  • Filling:

1 part lactose free cream cheese (I use Green Valley Creamery)

1 part honey and fig goat cheese from LaClare Creamery

Splash of vanilla

Pinch of sugar or maple syrup to taste

  • Strawberries tossed in Hearthy Foods cassava flour (or corn starch/tapioca starch) & sprinkle of sugar
  • Egg/water for egg wash

 

  • Lemon Icing Topping:

Fresh lemon juice

Powdered sugar

 

 



Beat the cream cheese, goat cheese, vanilla and sweetener of choice until smooth and fluffy

Combine strawberries, flour and pinch of sugar in a separate bowl

Roll out thawed GF puff pastry to desired shape, score ¼ inch border in dough

Top with cheese mixture, lay strawberries on top, brush edges with egg wash, bake at 375 for about 10-15 minutes

Mix powdered sugar and fresh juice to desire consistency, drizzle on top before serving
