Low FODMAP Crispy Tacos
It’s Taco Tuesday! This recipe was inspired by the Half Baked
Harvest crispy tacos and I’m pulling out all my favorites for a low FODMAP taco
night!
- Corn soft shells
- Beef or chicken cooked with Smoke N Sanity taco seasoning (I do the beef on the stove top and the chicken in a crockpot with water/Massel stock cube – shred and mix in seasoning)
- Shredded cheese
- Shredded lettuce
- Fresh cilantro
- Green Valley Creamery organic lactose free sour cream
- FODY Foods salsa (or any low FODMAP brand)
- Fresh limes
- Cilantro lime rice (cook arborio rice according to package instructions with Massel stock cube, diced red bell pepper and dried cilantro. Before serving, squeeze in fresh lime juice and add chopped fresh cilantro)
Brush GF soft corn
shells with olive oil, fill one side with rice/meat/cheese, fold over and press
down to keep closed, bake at 375 for approximately 10 minutes or until lightly browned
& crispy
Top with shredded lettuce, fresh cilantro, salsa, sour cream and fresh lime juice
