Sweet Potato Noodle Salad
This is a favorite salad in our house - we make a few different variations but this one has sweet potato noodles, arugula, nuts, cheese and cranberries.
- 3 large handfuls of arugula
- 1 sweet potato spiralized (or pack of store-bought noodles) sautéed in olive oil and salt until soft – about 15 minutes
- 1 handful of chopped walnuts
- 1 handful of dried cranberries
- 1 handful of feta cheese
Low FODMAP notes: keep your dried cranberry serving to a tablespoon if fructans bother you and sweet potatoes to 1/2 cup if mannitol bothers you - this recipe is also good with butternut squash noodles but keep serving size to 1/3 cup if Oligos (GOS) and mannitol bother you
