Crispy Potato Salad
I’ve been wanting to try out this trend and it did not disappoint!
- Baby potatoes
- Olive oil
- Sea salt
- Chopped celery (keep your serving to about 1/3 stalk when eating if mannitol bothers you)
- Fresh chives
- Fresh dill
- Dressing: deli mustard, mayo, apple cider vinegar and maple syrup
Boil potatoes in
salted water until fork tender; flatten on an oiled baking sheet; brush with
olive oil and broil until crispy (about 8 minutes); let cool and mix with chopped
celery, fresh chives, and fresh dill; pour on maple mustard dressing; add sea
salt and/or pepper to taste
