Caesar Pasta Salad with Bacon - GF & Low FODMAP

This is definitely my new favorite pasta salad of the summer!



  • Romaine lettuce
  • 1/2 pound bacon
  • GF baguette (I use Schar brand)
  • Olive oil (garlic infused if possible - I use FODY brand)
  • Sea salt
  • cheddar cheese block (optional)
  • GF pasta (I use Andean Dream brand of fusilli or elbow noodles)
  • Parmesan cheese block
  • Mayo
  • Deli or stone ground mustard
  • Maple syrup
  • Apple cider vinegar



Clean and tear romaine lettuce into bite size pieces

Cook and chop bacon (or microwave a precooked brand)

Cut gluten free baguette and toss in garlic infused olive oil (use low FODMAP certified if necessary), and sea salt; toast at 400 for about 5 minutes

Cut small cubes of cheddar cheese 

Make GF quinoa pasta in salted water according to package (I prefer the Andean Dream brand of fusilli or elbow noodles)

Toss all ingredients in maple mustard dressing:

        3 parts mayonnaise

1 part deli mustard (watch ingredients to ensure low FODMAP)

Splash of apple cider vinegar

Maple syrup to taste

 

Top with parmesan cheese shavings
