Avocado Egg Salad
No recipe here just a simple healthy breakfast that pulls together in minutes!
- GF toast (I used Canyon Bakehouse)
- Avocado
- Medium or hard-boiled eggs
- Sea salt
- Fresh fruit
- Mimosa (optional but not really 😉)
Boil eggs about 5 to 6 minutes, mash ½ avocado with 2 eggs, salt/pepper to taste, serve on toast with fruit
