GF Cacio e Pepe
This is such a simple but delicious dish and we’re making the GF noodles from scratch (or my husband is).
- 2 cups GF flour
- ¼ teaspoon sea salt
- 3 eggs
- Butter and/or olive oil
- Grated parmesan cheese
- Fresh cracked black pepper
Add flour and salt to food processer; pulse a few times to combine; add eggs one at a time; use low setting until the dough comes together into a ball; knead a few times by hand until you have a smooth ball; let rest in a bowl covered with plastic wrap for at least 30 minutes.
Roll out dough
and cut noodles or use the pasta attachments on a mixing stand; boil in salty
water until floating (approximately 2-4 minutes). Toss noodles in butter and/or olive oil, grate
in parmesan cheese and top with black pepper.
Note: if dough is
too dry add a bit of water, if dough is too sticky add a pinch of flour
