Cinnamon Coconut French Toast

I have to thank my husband for this delicious al fresco breakfast – he knows how much I love french toast and this one doesn’t disappoint as a low FODMAP version!

 


  • GF bread
  • 3-4 Eggs
  • ¼ cup vanilla coconut milk (egg to milk ratio per preference)
  • ½ tspn vanilla extract
  • Dash of cinnamon
  • 1 scoop collagen powder (I use Hearthy Foods brand)
  • Maple syrup/fruit for toppings

 

Lightly whisk eggs with milk, vanilla, collagen, and a dash of cinnamon

Dip bread in batter and cook on buttered griddle

Serve with fruit, honey or maple syrup
