Mandarin Noodle Salad – GF & Low FODMAP
This pasta salad is sweet and salty and you could even add beef or chicken for a boost of protein – I’m sticking with just carbs today!
- GF quinoa noodles boiled in heavily salted water
- Shredded cabbage slightly sautéed in olive oil and salt (I buy the coleslaw bags to save time)
- Mandarin oranges
- Fresh cilantro
Dressing:
- ½ cup olive oil
- 2 tablespoons coconut aminos
- 2 tablespoons seasoned rice wine vinegar
- 1 tablespoon honey or maple syrup if vegan
- 1 tablespoon deli or Dijon mustard
- Juice of 1 lime
- 1 teaspoon fresh grated ginger
- Salt
Add sautéed cabbage to boiled noodles, toss together in dressing, top with fresh cilantro and oranges.
Notes: adjust
dressing ingredients to desired taste; red bell pepper is also a great addition
to this dish
