Mandarin Noodle Salad – GF & Low FODMAP

This pasta salad is sweet and salty and you could even add beef or chicken for a boost of protein – I’m sticking with just carbs today!

 


  • GF quinoa noodles boiled in heavily salted water
  • Shredded cabbage slightly sautéed in olive oil and salt (I buy the coleslaw bags to save time)
  • Mandarin oranges
  • Fresh cilantro

 

Dressing:

  • ½ cup olive oil
  • 2 tablespoons coconut aminos
  • 2 tablespoons seasoned rice wine vinegar
  • 1 tablespoon honey or maple syrup if vegan
  • 1 tablespoon deli or Dijon mustard
  • Juice of 1 lime
  • 1 teaspoon fresh grated ginger
  • Salt

 

Add sautéed cabbage to boiled noodles, toss together in dressing, top with fresh cilantro and oranges.

Notes: adjust dressing ingredients to desired taste; red bell pepper is also a great addition to this dish
