Tuna and Rice
This GF and low FODMAP dish is packed with vitamin D and makes a great meatless Monday option!
Rice (I prefer
arborio for this but only had jasmine on hand)
Diced carrots
Massel’s plant-based
stock cube or low FODMAP broth
Garlic infused olive
oil or butter
Canned tuna
Canned sweet corn (drained)
Hard boiled eggs
Green olives
Cook arborio rice
according to package instructions with garlic infused olive oil or butter, chopped
carrots & 1 massel cube
Serve rice with the
tuna, corn, eggs and olives. I leave
mine undressed but you can add olive oil or a vinaigrette – others ingredients that
go well in this dish are red bell peppers & cherry tomatoes.
Nutritional note: 5 ounces of tuna and 2 eggs will get you 95%
of the vitamin D you need for the day!
