Wine Thyme Chicken

 


The dutch oven from the kids is one of my favorite gifts and I’m making a pot of savory chicken and vegetables in it tonight. 

 


  • Chicken leg quarters
  • Salt and pepper
  • Olive oil (preferably garlic infused)
  • Potatoes and various root vegetables such as carrots/turnips/parsnips, cleaned and cut
  • 1 bunch of green onions (green tops only)
  • Fresh herbs – rosemary, thyme, sage
  • 1 cup of dry white wine
  • 1 cup of low FODMAP chicken broth (I use a Massel stock cube with water)

 

Preheat oven to 350

Season chicken with sea salt and pepper

Heat garlic infused olive oil (low FODMAP if necessary)

Sear chicken on all sides

Add wine, broth, veggies, herbs and green onions

Cover and bake approximately 2 hours
